Dinner is a Korean BBQ style where you do the grilling yourself.
Enjoy some Tajima beef while cooking it to your liking.
■What is Premium Tajima Beef “Tajimaguro”?
Customers are always put first at Ueda Farm, and the cattle are raised with great care.
"Make sure the forage is safe and secure since the food that the cattle consume becomes our nourishment."
→ 100% natural materials and organic feed are researched and developed independently.
"We hope you enjoy the meat of the cattle grown carefully for three years."
→ The meat has a strong umami taste and light fat without heartburn as a consequence of modifying the forage.
"Tajimaguro" is a highly rare Tajima beef that is carefully bred organically. Tajimaguro beef's fat melts at around 12 degrees, whereas Kuroge Wagyu beef’s fat melts at around 25 degrees. Tajima beef is delicious and good for beauty and health, as evidenced by ingredient analysis, which reveals that it has 30% more Linoleic acid than other beef, which is said to give shine to hair and skin. We have half to one head in stock.

◎Three appetizers (Simmered Tajimaguro beef tendon, round roast beef, etc.)
◎ Soup (Consommé soup made by simmering Tajimaguro's shin meat and plenty of vegetables.
◎ Tajimaguro's short ribs shabu-shabu salad
◎Tajimaguro's charcoal-grilled Korean BBQ
・Thinly sliced loin (eaten with grated radish, ponzu sauce, and green perilla)
・Two types of Tajimaguro meat selection (eat with wasabi and salt)
◎Claypot rice
Locally grown rice (Koshihikari) is cooked in a Claypot for each table.
◎ Others (Homemade Tajimaguro Tsukudani, miso soup, pickles, dessert)
